What Baristas Wish You Knew About Great Coffee at Home

Behind the bar, a few small habits separate an okay cup from a great one. Here's what our baristas — across 30+ Dancing Goat cafés — wish every coffee lover knew.

1. Freshness beats everything

Coffee tastes best in the weeks after roasting. Buy in amounts you'll actually finish, keep the bag sealed in a cool, dark place, and skip the fridge (it introduces moisture and stale odors). Whole beans stay fresh longer than pre-ground.

2. Grind right before you brew

Ground coffee goes stale fast. Grinding just before brewing is the single biggest upgrade most people can make — and matching your grind size to your method matters just as much. Our Grind Size Guide shows exactly where to set it.

3. Match the coffee to the method

Different coffees shine in different brewers. We reach for House Blend when we want espresso and milk drinks, and Huila – Colombia for filter and V60. Travelling? Instant Drip keeps quality high with zero gear.

4. Mind your water and ratio

Coffee is mostly water, so use fresh, filtered water off the boil (not boiling). A good starting ratio is roughly 1 gram of coffee to 16 grams of water for filter — then adjust to taste.

5. Taste, don't rush

Slow down and notice what you're drinking: is it bitter (grind finer/shorter), or sour and weak (grind coarser/longer)? Small tweaks, one at a time, dial in a great cup.
